Lucky to have Cate Lord sharing her holiday recipe and e-book!

We are very excited that Cate Lord, author of "Lucky Girl," is joining us today. Cate Lord is the contemporary pen name of multi-award-winning historical romance author Catherine Kean. Her novels have garnered numerous accolades, including two Reviewer’s Choice Awards and the Gayle Wilson Award of Excellence. Her books also finalized in the 2008 Next Generation Indie Book Awards and the 2008 National Readers’ Choice Awards.

Grateful for her wildly active imagination and plenty of story ideas, Cate is busy working on her next book. She lives in Central Florida with her husband, daughter, and a very spoiled cat.

This recipe is a favorite of mine and not just because the bars are super yummy! I remember making these with my sister when I was a kid. Lots of good, warm-and-fuzzy-like-a-favorite-blankie memories. I’m pretty sure Jess Devlin, the heroine of my romantic comedy Lucky Girl, would enjoy these too, since she loves cheesecake and sweet treats!


Chocolate Chip Coconut Cheesecake Bars

Crust
1-1/2 cups graham cracker crumbs
2 tablespoons sugar
1/3 cup butter, melted

Filling
1-8 oz package cream cheese
1/3 cup sugar
1 large egg
1 teaspoon vanilla
1 tablespoon grated orange peel

Topping
1 cup chopped walnuts or pecans
1 cup semisweet chocolate chips
2/3 cup flaked coconut

Preheat oven to 350 degrees.
In a large bowl, combine graham cracker crumbs, 2 tablespoons sugar, and melted butter. Press into an ungreased 9 x 13 pan. Bake 7-8 minutes. Remove from oven and let cool slightly.
In a medium bowl, beat cream cheese, 1/3 cup sugar, egg, vanilla, and orange peel until well blended. Spread evenly over crust.

In another bowl, combine nuts, chocolate chips, and coconut. Sprinkle over cream cheese and press down gently. Bake 25-30 minutes or until golden brown. Cool in pan. Cut into squares and store in refrigerator.

  5. My mouth watered as I read your recipe! Thanks Cate & Entangled for adding at least a pound to my hips through the computer. :-) Christmas is very special. It brings forth all kinds of wonderful memories real and imagined. One delightful time for me was taking my two nieces into NYC for the weekend and doing city-stuff like seeing the Rockefeller Center tree, going to Radio City Music Hall for the Rockettes show, and ice-skating in Central Park, we had the best time.   8. A memory that makes me warm and fuzzy inside is going sledding with the family during wintertime and then going home for homemade soup. It's ironic since it's such a cold activity.

  18. Chocolate and coconut! What more do I need? Yum!

    A memory that I treasure is my family being together (it's a big one, seven kids) singing and dancing and playing music together. My Dad on harmonica, brothers on accordian and guitars and the rest singing or dancing. Both my parents have passed on now and we are all living far from each other. So it's nice to think back every Christmas to the good times.

  22. Church in christmas eve at night is wonderful. We always havee a big christmas tree inside church with all the candles lit and in the benches just tiny candles as well, no lights. Sooo wonderful!
    Second winter memorie is walkin in wintery Vienna, snow under your feet and all the christmas deco up in the city centre. Really special!

    I need to try the cookies!! Yum! (I´ll just leave the coconut-flakes...;) )

Fave holiday memory: every year on Christmas eve, my parents would put out salami & crackers, cheese & pickles, chips & dip, and over great food, we'd have friends and family stop by throughout the evening. Christmas music would be playing, my mom would be dressed up in something Christmas-y, my dad would be playing the guitar and the wine would be freely flowing. I would be allowed to have a few sips during a holiday toast my parents would make at the end of the night. Then us kids would go to bed and "sleep" while waiting for the morning to come to find what Santa had brought for us!!! BEST NIGHT OF THE ENTIRE YEAR!!!!
